Creamed Spinach

As a child, I remember watching Popeye the Sailor Man and becoming convinced that spinach must have some kind of special power. It was probably the main reason I ate spinach at all, and this dish—creamed spinach with mashed potatoes and sunny-side-up eggs—was my favorite version of it, and really the only one I was willing to eat as a child.

 

Recipe

Ingredients:

Creamed Spinach

  • 700 g spinach

  • 50 g butter

  • 2 tbsp flour

  • 120 ml milk

  • 4 cloves garlic

  • 1 tbsp sour cream

  • salt and pepper to taste

Instructions:

  1. Wash the spinach thoroughly, place it in boiling water, blanch briefly, and drain.

  2. In a saucepan, melt the butter and lightly sauté the flour. Pour in the milk and whisk until smooth.

  3. In a separate pan, sauté the minced garlic until lightly golden, being careful not to burn it.

  4. Add the spinach, garlic, and seasonings to the sauce, then cook for about 5 minutes while stirring.

  5. Remove from the heat, transfer to a blender, and blend until smooth. Return to the saucepan and stir in the sour cream.

  6. Creamed spinach is usually served with mashed potatoes and sunny-side-up eggs.
