Creamed Spinach
As a child, I remember watching Popeye the Sailor Man and becoming convinced that spinach must have some kind of special power. It was probably the main reason I ate spinach at all, and this dish—creamed spinach with mashed potatoes and sunny-side-up eggs—was my favorite version of it, and really the only one I was willing to eat as a child.
Recipe
Ingredients:
Creamed Spinach
700 g spinach
50 g butter
2 tbsp flour
120 ml milk
4 cloves garlic
1 tbsp sour cream
salt and pepper to taste
Instructions:
Wash the spinach thoroughly, place it in boiling water, blanch briefly, and drain.
In a saucepan, melt the butter and lightly sauté the flour. Pour in the milk and whisk until smooth.
In a separate pan, sauté the minced garlic until lightly golden, being careful not to burn it.
Add the spinach, garlic, and seasonings to the sauce, then cook for about 5 minutes while stirring.
Remove from the heat, transfer to a blender, and blend until smooth. Return to the saucepan and stir in the sour cream.
Creamed spinach is usually served with mashed potatoes and sunny-side-up eggs.
